Muffins, cupcakes, muffins!

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • Optional: 1 cup add-ins such as berries, chocolate chips, nuts, etc.

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In a separate mixing bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix the batter or the muffins will become tough.
  5. Fold in any add-ins you like, such as berries or chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each cup about 2/3 full.
  7. Bake the muffins for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
