When you think of comfort food, quiches come to mind quite quickly. Whether for breakfast, lunch, or dinner, quiches make for an incredibly filling meal, and one with endless possibilities. If you’re looking for a delicious quiche with an interesting twist, this quiche onion and cheese recipe is a must-try.

What is a quiche?

A quiche is an egg-based dish consisting of a pastry crust and an egg filling. Traditionally, a quiche is filled with a combination of cream, milk, cheese, eggs, and other ingredients such as diced vegetables, cooked meat or seafood, or herbs and spices. It can be served warm or cold, and can be served with various accompaniments or eaten alone.

Tips for making the best quiche

  • Use ripe, sweet onions and grate them instead of chopping them finely. This helps to bring out the sweetness of the onion in the quiche.
  • Use quality cheeses. Hard cheeses such as cheddar and Gruyere are ideal for quiches. In this recipe I used roquefort, parmesan and provolone but you can use the most you like
  • Pre-cook the onions to remove the intense flavor
  • Make sure to cook the quiche thoroughly so that the eggs are cooked through and the cheese is melted.

Ingredients

  • 2 to 3 onions

  • Roquefort cheese

  • Parmesan cheese

  • Provolone cheese
    2 eggs
    Chili power (opcional)

Directions

  • Cut the onions and cook them in a pan for 10 minutes with a little olive oil and a pinch of salt
  • Let the onions rest until cool
  • Cut and mix the different cheeses in the desired proportions. Keep in mind that Roquefort cheese is always used in a smaller proportion than the rest since its flavor is a bit intense.
  • Beat the two eggs and mix them with the cheese.
  • Bake for 15 minutes, 180Cº (350Fº). Another option is to use the air fryer. I used a cast iron skillet
