Tips for making the best quiche
- Use ripe, sweet onions and grate them instead of chopping them finely. This helps to bring out the sweetness of the onion in the quiche.
- Use quality cheeses. Hard cheeses such as cheddar and Gruyere are ideal for quiches. In this recipe I used roquefort, parmesan and provolone but you can use the most you like

Ingredients
2 to 3 onions
Roquefort cheese
Parmesan cheese
Provolone cheese
2 eggs
Chili power (opcional)
Directions
- Cut the onions and cook them in a pan for 10 minutes with a little olive oil and a pinch of salt
- Let the onions rest until cool
- Cut and mix the different cheeses in the desired proportions. Keep in mind that Roquefort cheese is always used in a smaller proportion than the rest since its flavor is a bit intense.
- Beat the two eggs and mix them with the cheese.
- Bake for 15 minutes, 180Cº (350Fº). Another option is to use the air fryer. I used a cast iron skillet
